Trader Joe's Mediterranean Roasted Chickpea and Veggie Wraps


PREP TIME: 10 minutes

COOK TIME: 22 minutes

1 can Trader Joe's Greek Chickpeas

1 English cucumber

2 handfuls grape tomatoes

4 Trader Joe's Pita Breads (original or wheat)

1 tub Trader Joe's Roasted Garlic Hummus

1 tub Trader Joe's Vegan Tzatziki Dip

Preheat oven to 400. Spoon chickpeas out of the can and onto a rimmed cookie sheet. Bake for 22-25 minutes. Use a thin spatula to scrape from the pan. They will be golden and slightly crunchy. 

Meanwhile, peel, halve, and slice the cucumber. Cut tomatoes in half. 

Once the chickpeas are cooked, heat pitas, one at a time, directly over a low gas flame or in a dry skillet. If cooking directly over flame, watch constantly, heat for a few seconds, and flip using metal tongs. Place warmed pitas in a dish towel while heating the rest. 

Spread 2 tablespoons hummus onto one side of each pita. Sprinkle with roasted chickpeas. 

Add cucumber and tomatoes to one-half of each pita. Spoon tzatziki dip over the top. Fold and eat!
